Overnight oats are the perfect healthy breakfast for anyone in a rush- or not. They are a delicious variation to regular oats, similar to bircher muesli. Plus, these are made overnight which means that you can immediately dive into them when you wake up in the morning. I made this version with açai powder because 1: it give your oats a lovely purple color and 2: this antioxidant-rich superfood pairs perfectly with your fibrous oats for a nutritious start to the morning!
Serves 1 person
- 1/2 cup rolled oats
- 1/2 cup almond milk
- 2 tbsp greek yogurt
- 1tsp açai powder (you can find it at health-food stores)
- 1-2 tsp sweetener (such as stevia, honey, maple syrup)
Mix up all your ingredients really well and place the mixture in a bowl or jar overnight.
In the morning, top with a slice banana, a sprinkle of hemp seeds and a splash of almond milk and enjoy!
