Brownie Batter Protein Cookies



There are two desserts that I’ve been trying to healthify recently, brownies and chocolate protein cookies. You know where this is going right? I haven’t been having much luck, protein powder will make a tough cookie (see what I did there) and my brownies just haven’t been coming out fudgey!

After many failed attempts, THIS HAPPENED.



A utopian combination of a protein cookie and a deliciously intense brownie. I’m not sure what I was aiming for while I was making the batter, but luckily I jotted down the recipe because it’s damn worth sharing. Imagine a chewy, yet sturdy chocolatey sweet centre wrapped around a delicate crackling exterior. Now stop imagining and make your dream come true. Here, you’ve got all the ingredients you need.

Makes: 6 cookies


  • 1/3 cup oat flour
  • 1 scoop sweetened chocolate whey protein ( I used Tera’s whey)
  • 2 tbsp coconut sugar or granulated stevia
  • 1/4 tsp uncut stevia
  • 1 tsp vanilla extract
  • 1 tbsp of ghee or coconut oil
  • 2 tbsp almond milk
  • a handful (read: a ton) of dark chocolate chips


Disclaimer: the cookie dough tastes like brownie batter.

Preheat your oven to 180°. Simply mix all of your dry ingredients in a bowl and add in the liquid ingredients.Mix again and form into balls and flaten on a baking sheet (the batter will be sticky but that’s what makes them fudgey!). Place the cookies in the oven for 13 mins then turn off the heat and leave them in for 5 minutes to rest (they will be very delicate).

Enjoy warm with an icy glass of milk!
