Now, I am not a vegan but I think vegan recipes are a fun challenge for people like myself to experiment with, especially that these recipes tend to become healthier. Keeping your diet palnt based to a maximum is certainly something you should consider, it allows for so much more nutrient-dense foods to be consumed and will be relatively lighter.
“To veganize” is definitely a verb in books, and here I veganize the ever so classic ceasar salad *applause*.
A delectable ceasar salad should consist of three important factors:
- crisp, fresh romaine
- a smooth, substantial sauce
- crunchy, delicious croutons
This ceasar salad has got it all! Minus the heavy cream and excess cheese, plus all the deliciousness.
You will be surprised at how much this sauce resembles the traditional ceasar sauce. This recipe is perfect for vegans obviously but more than acceptable for anyone just looking to change up their salad game.
Makes: 3-4 large salads
For the sauce:
- 1/2 cup cashews, soaked overnight
- 1/2 cup filtered water
- 1/4 cup nutritional yeast
- 1 garlic clove
- generous dash of sea salt
- crack of pepper
- squeeze of lemon
For the salad:
- 1/2 cup home-made croutons
- 1 head of romaine, chopped
- any veggies you desire: corn, bell pepper, cherry tomatoes etc.
Blend all the sauce ingredients together in a high-speed blender until smooth.
Mix the salad ingredients together and serve the sauce individually.
